In the first place I'd have tried moving the Windows profile over to the Mac. You would need to make some adjustments to allow for different folder names and drive names.

Given that you have gone past this point, I think now I'd use the ImportExportTools add-on to import individual folders.

Note that you won't be allowed to import directly into an IMAP-connected account's folders. If your accounts use IMAP, import directly into your Local Folders account and move the messages afterwards.
