My extra tab disappeared. Now I need to hit Control + T to get a new tab on my Mac. Is there anyway I can have an extra tab available sitting on my tab bar?

What do you mean with the extra tab setting?
Do you miss the new tab button on the Navigation Toolbar?
If that is the case then click Restore Defaults in the Customize palette.
