I am wondering step by step how to revert back to Mozilla Firefox 51, I cannot use Java with this update. I need to run Java during my proctor exams for graduate school.

The release version of Firefox doesn't support Java, so for now, you can use the ESR version, which you can download from here :
https://www.mozilla.org/firefox/organizations/all/
