How can I use the 'insert' button to erase previous text as I write an email?
There appears to be no way I can use the 'insert' button in emails as I do in Word documents to replace existing text with new text. Am I right?

You are correct, Thunderbird does not have an overtyping mode. This has been proposed and advocated over the years, but not implemented.
