Have upgraded to version 31 but cannot find the insert special character function, which is needed to type names with French accented characters properly.

When I click on View > Toolbars > there's no 'Menu Bar' to select. What's going on here?

More confusing, it makes a difference which IMAP inbox the main window is on. From my first inbox there's a 'Formatting Toolbar' (though no 'Menu Bar'). From my second inbox, there's only 'Mail Toolbar' and 'Status Bar'.
