Modify header generated when replying
When I reply to a message Thunderbird generates a line saying "On <date & time> <Person from> said:
For example I replied to an email from "David Steel - Writers Life.org"
The generated line was: On 17/01/2016 2:33 a.m., David Steel - WritersLife.org wrote:
I always change this so I can say:
Dear David,
On 17/01/2016 2:33 a.m., you wrote:
Is there a way I can configure Tbird to do this automatically, please?

I think you can achieve this with the Change quote and reply format add-on.
I think this add-on was designed for you.
