For e.g.

Email: Regular size of font with black font.

Chat: Bigger Size of Font with a darker red font.

Your font sizes, colours etc. are stored in a CSS file called userChrome.css. If you know how to edit CSS code you may be able to achieve what you want -- I don't know if there are separate settings in that file for chat and regular email. There's an add-on called GlobalChrome that might be of use, it provides a 'custom' file which I assume is editable.
