What exactly does "Leave messages on POP server for 3 days mean?"
I have my server settings (POP account) configured as stated above. I know that 'read emails' (those accessed by my Thunderbird email client - Win7, FWIW) get deleted after 3 days. If I were to simply not access my POP server for say 5 days, are those older than 3 days emails still deleted?
If the answer is 'yes', is there a way to automatically delete (after a few days) only those emails that have been downloaded to Thunderbird? Thanks.

Hi Dave.
All account options for POP account you set in Thunderbird (including deleting from the server after specified number of days) are realized by Thunderbird itself. So if you do not access your mailbox in Thunderbird for 5 days, nothing will be deleted, as Thunderbird was not running and hasn't connected to your inbox to delete those messages.
Once you connect again (e.g. after 7 days), your messages will be downloaded into Thunderbird and those older than 3 days deleted from the server.
