I'm still running Thunderbird 52.9.1 (the last version before the WebExtensions apocalypse), primarily because of the AttachmentExtractor add-on (and also the Junquilla add-on). I use it to extract all attachments and inline images from a group of emails, saved with the file modification date matching the email date, so they are in correct chronological order on my hard drive.

Is there any substitute for this that works with a modern Thunderbird version?

Attachment Extractor claims to work with TB 102. The FiltaQuilla add-on has options to detach or save attachments in a filter.

Do either of those set the file modification dates to match the email dates?

I don't know; you could ask the add-on developer, or try it and see. Install TB 102 to a separate folder and run it in its own profile, if you wish to keep the existing setup untouched. Upgrading from 52 to 102 is a tedious process with many pitfalls, but by separating the two versions, mail, contacts etc. can be transferred from the 52 profile to the 102 profile.
