All mail is a Gmail invention that stores all your mail. I wonder where they got the name? It is a duplicate of your other folders and it also collects most, if not all, your deleted messages. It is not needed on a daily basis.
You can Unsubscribe from it in Thunderbird. File-Unsubscribe.
You should maintain this folder on a regular basis though. Go to gmail and clean up that folder periodically.
