Any item downloaded automatically opens, instead of when I choose to open it. How do I stop this?

When I download mp3's, docs or powerpoints (to my desktop), these items are automatically opened in their respective programs. I would like to stop this so that items download to my desktop but stay closed until I doubleclick to open them.

I open the preferences and "applications" but I don't even see an entry for docs and ppt files and I see several for mp3's. I don't have a problem with the program being used to open the files, I just don't want them opening automatically.
