I transferred my old hard drive to my new computer, it is not the boot disk; when Thunderbird loaded, the old profile is missing.

I loaded Thunderbird, and none of my old profile folders or emails or address book can be found on any hard drive. I have followed the instructions to "locate your profile", and none of my attempts have been successful. I now have 2 new profiles -- both empty, and no idea how to recover the old folders, emails, and address books.

You'll have to point Thunderbird to the location of the profile on the old disk. Presumably that disk has a different drive letter than C: now.

Use Profile Manager to point Thunderbird to the profile on the old disk. http://kb.mozillazine.org/Moving_your_profile_folder_-_Thunderbird#Use_the_Profile_Manager_to_move_your_profile

Finally start Thunderbird with the correct profile. You can do that either via Profile Manager, or on the command line using the option -P <profile_name>.

okay, I've followed this advice several times. found the "location of the profile on the old disk", and "use Profile Manager to point Thunderbird to the profile on the old disk".... and then, when I start Thunderbird, there are none of my local folders, no address book, no emails.

.Indeed, this is precisely the problem. The old profile doesn't appear to have any of this needed data.
