When replying or forwarding to a received email, the window opens in full screen and the "All Folders" pane disappears along with the option to select a recipient from any of the address book(s). How to resolve this issue?

I am guessing you need to press F9 to turn the contacts sidebar on if it is not already. (F9 toggles the panes visibility.)
