I need to allow 2 sites (so far) to choose their own font styles and sizes, but most of the rest drive me bananas and are difficult to read, I've tried installing 'Stylish' but that just offers a list of styles for specific sites (like YouTube and GMail etc) made by coding type people.

That's not me.

Didn't there used to be something that let you change fonts and colours when you had the site page open? There was a pane to one side that gave you a preview of what your adjustments would look like - what can I use like that for FireFox 36?

Your System Details list shows the "Document Font Toggle" extension, so it is possible that this extension is causing it and has its own settings or isn't working properly in the current release.
